Once if planned and executed properly, going for a jungle safari is one of the most exhilarating experience one can have in life. Unlike the planned touring trips, you are not able to predict what you are going to experience next inside the deep jungle, which is the most exciting part of it.

JT’s Recipe: Peanut Butter Surprise Cookies

Greetings Wonderful People!!

The holiday season is full swing. Hanukkah begins Saturday, Christmas Day is Sunday, and Kwanzaa starts next Monday. Purchasing gifts for your loved ones. Decorating your house with holiday cheer. When I think about the winter holidays, the first thing that comes to mind is homemade cookies. There is something about Christmas and cookies that brings a smile to my face. From icebox cookies to sugar cookies, from snickerdoodles to chocolate chip cookies; I haven’t met too many cookies that I don’t like. But who makes homemade cookies anymore? With all the other things that are going, who has the time? Well if there was a simple, but delicious cookie to make; would you make it?
Let me suggest the Peanut Butter Surprise Cookies.

The Peanut Butter Surprise Cookies

The Peanut Butter Surprise Cookies have been one of my wife’s favorite cookies since she was a itty bitty little girl. Her mother found the recipe in a cookbook that their church, St.Jacobi Lutheran Church, published more than thirty years ago. A God fearing church lady named, Marjorie Wetzel submitted the recipe. Wondering about Mrs. Wetzel, I searched and quickly found her obituary. I learned that this amazing woman of faith who was very active passed away just last year at the age of 94. Her husband passed away this year in February at the age of of 97. When I showed my wife their photos from the obituaries, she recognized them and remembered them from the church. I feel a connection with this couple because we share a love for this peanut butter cookies and our faith in God. Here is her recipe.

Original Recipe from Mrs. Wetzel
1 cup peanut butter
1 egg
1 cup white sugar
1/2 teaspoon vanilla
Mix together and drop by 1/2 teaspoons on ungreased cookie sheet. Bake in a 350 degree oven.

The recipe did not include how long to bake the cookies. For the first batch, we tested twelve minutes. That was too long because the bottom was too brown for our liking. For the next batch, we tried eight minutes and it was perfect. We didn’t have any vanilla in our cabinet, so we substituted honey and it worked wonderfully. We used brown eggs from a farmer that my mother buys from. Since we tweaked the recipe a bit, here are our modifications.

1 cup peanut butter
1 large brown egg
1 cup white sugar
1/2 teaspoon honey
maple sugar to sprinkle on top of the cookies before putting in the oven
Mix all of the ingredients together. Roll about 1/2 teaspoon of the mixture into ball and place on ungreased cookie sheet. Flatten the cookie with a fork, making a criss-cross pattern in the cookie. Place a pinch of maple sugar on the top of cookie. Bake in a 350 degree oven for 8 to 9 minutes. Allow to cool about for ten minutes before removing from the pan. Yields about two dozen cookies and ingredients can be doubled if more cookies are needed. We recommend that you use the old-fashioned peanut butter and not the natural kind that separates. Since it has a different texture, we don’t think the finished cookie would be to our liking.

The cookies are called Peanut Butter Surprise Cookies. And these cookies will definitely surprise you, for a couple of reasons. One, the recipe cannot be any simpler. There are only four ingredients. They mix together quickly and are easy to put together. You should have all of the ingredients in your pantry. Two, the cookies take only eight minutes to bake in the oven. You can easily make four dozen in about one hour or less. Three, the cookies taste amazing. They are soft and creamy; and are packed with a peanut butter flavor that will explode in your mouth. Your taste buds will thank you.

Hubby really enjoyed the Daydream View which is a headset and remote controller by Google that takes you virtually into museum art galleries, go swimming with the dolphins, jump from a helicopter, learn how to surf a wave, and visit the Taj Majal, and go 360 degree journeys around the world. Jumping from the helicopter was a doozy. You really have to make sure you sit down at all times you are using this device. You can even play a few games, the collections are growing and you can watch Youtube videos or movies.

I don’t know if its my head, wearing glasses or what, but when I would first put on the headset it felt fine. However after a few minutes I would feel the viewer sliding down the front of my face.  I would hold the front of the viewer to be able to see clearly through it. Once I took the viewer off and adjusted it again I was okay. I could only play for 45 minutes because the headset would get heavy on me and the phone would get hot, and battery would go from fully charged to 40 percent. I needed to stop and let it cool down and recharge it.

What are the Rarest Collectible Coins?

There is a reason why many people always look at the coins a cashier hands them when they make change. There are certain rare coins that are worth a fortune. While it isn’t probable, you will receive a million-dollar coin at the check-out, knowing some of the rarest coins and their value could be beneficial when you go to estate or yard sales or are cleaning out a grandparents’ home.

Coin collecting is one of the oldest hobbies on record. Besides, collecting coins can be rewardable. Not only do many coins gain value, but if you decide that collecting is not for you after trying it, you will likely get all of your investment back, a rare occurrence when it comes to most investments.

Most of the highest-rated coins are from the 1800s up to around 1920. Values decrease dramatically after that time. There are basically three reasons a coin is highly valuable:

  1. The number of coins in existence. A low number of known coins will make any coin more valuable.
  1. The content of the coin. The type of metal used for the coin, whether it’s gold, silver or copper, make it more costly. Most coins today don’t contain the same amount of such metals.
  1. Historical value of the coin. Some coins are expensive because of who owned them or how they are recovered.

There are some coins worth millions while some are worth several thousand. Below is a list of some of the most collectible coins in the world.

The 1849 Double Eagle
By far, this is the most valuable coin known as it is valued at $20 million. It has the trifecta of valuable attributes as it is made of gold at the beginning of the California gold rush and is incredibly rare. The value has jumped in recent years because it was valued at $15 million just two years ago.

Saint Gaudens Coins
These coins garner a lot of cash depending upon the mint year. The 1907 Saint Gaudens is valued at $8.5 million and is so rare that the best are located at the Smithsonian Museum. This book is an interest for collectors by its own. Here the 1927 D Saint Gaudens Double Eagle is valued at $1.2 million while the 1933 Double Eagle is valued at $7.59 million.

The 1933 Double Eagle is highly distinguished because 1933 was the last year of production. This coin was never circulated and all were melted because the government discontinued the gold standard in 1933. Other Saint Gaudens coins also hold value. The 1921 St. Gaudens Double East is valued at $130,000. There is a 1930 version that also holds good value at $120,000.

1794 Silver Dollar
This coin, the first silver dollar produced by the U.S. Mint, is different from later coins in that the hair of the head flows, earning it the nickname of the “Flowing Hair Dollar.” Worth 7.85 million, this coin is one of the most rare and one of the most expensive in a private collector’s hands. It also has a national historical aspect to it, making it a special coin to own. Don’t miss a chance to deep into revolutionary world of 17th-18th centuries coinage.

1822 Half Eagle
This $6 million coin has a bit of mystery because of the 17,796 coins minted, there remains only three left. Two of those are in the Smithsonian Museum, leaving the world to speculate where the third coin remains. These coins were released in $5 denominations, are gold and feature a Liberty head of the front and a flying eagle on the back.

Liberty Coins
Much like the Saint Gaudens coins, there are several in this series that are worth a fortune. Topping the list is the 1913 Liberty Head, valued at $4.5 million. This was a 5-cent coin and has the distinction of being produced without approval from the U.S. Mint.

The 1913 coin was the first to bust the million-dollar cost ceiling when one sold in 1996 for $1.485 million. The 1870 Liberty Seated dollar is valued at $1.9 million and the 1881 Liberty Head Double Eagle coin is valued at $180,000. Some of the less rare coins are the 1873 CC Liberty Seated quarter, worth $90,000 and the 1887 Liberty Head Double Eagle, valued at $89,000.

No, you may not have a million-dollar coin in your purse, but there could be a chance you may have some of the less rare coins in an old coin collection book or box in the attic. It doesn’t hurt to check because you could find your own treasure, stowed away, waiting to be discovered!

I am getting deep today, under your skin, to get to the heart of your emotions, to release the beautiful person you are inside.

I know that I am not the typical person someone would see in the fashion magazines.  However, I felt I don’t measure up because I am not a size double-zero. I canceled many of my magazine subscriptions because it was too much clutter and most of them looked the same and had identical ads. Yes, it use to intimidate me to see someone who is thin and tall and when I look in the mirror, I am somewhat tall with hips. Shakira says, “Hips don’t lie!” And my hips are staring right back at me. It seemed like a joke for me to be doing a fashion blog because who would take me seriously when it came to fashion.

Well we have to be comfortable in our own skin. Comparison is a deadly weapon that will do nothing but bring you and others around you down.

Body Image was a battle for me. Even though I worked out hard and ate healthy, I never was stick thin. Well, you know what! I finally had to finally realize that it is not about being stick then its about being healthy.

Should I loose 10, no 20, no 30 pounds?  What’s good enough? It’s never good enough!

Have any of you felt like that?

Stop it! I immediately we have to cast those imaginations down and thank the Lord for who He is in me (in us) and what he has done for us.

I can only speak for myself. If I truly dictated my life on what other people thought I should do, I would not be where I am today.
